FAQ

Here you’ll find the most frequently asked questions. Don’t see your question? Feel free to contact us.

A tempering room gradually brings frozen or chilled products to the correct processing temperature, helping protect product quality, support food safety and reduce waste.

Tempering room - how does it work

What is a tempering room?

A tempering room is a temporary, temperature-controlled space used to bring frozen or chilled products to the correct processing or handling temperature in a controlled and consistent way. Rather than simply storing products, tempering rooms form an important step between frozen storage and production, allowing goods to be thawed or conditioned before cutting, mixing, packing, cooking or distribution.

For food manufacturers, controlled tempering supports safe cooling methods for food by helping products reach safe food cooling temperatures in a controlled environment. Products such as meat, fish, bakery ingredients, dairy ingredients, convenience foods and other temperature-sensitive materials can be brought to the required temperature while maintaining product quality, minimising drip loss and reducing unnecessary waste.

Tempering rooms - applications when to use it

Where and why are tempering rooms needed?

Tempering rooms are used whenever frozen or chilled products must be brought to a stable processing temperature without compromising quality, food safety or production planning. They are widely used across food manufacturing, meat and fish processing, industrial bakeries, logistics and distribution, pharmaceuticals, biotechnology, chemicals and manufacturing.

For food producers, tempering is a critical process step. Controlled thawing helps maintain product consistency, texture and yield while supporting safe food cooling temperatures, reducing uneven defrosting and minimising drip loss. Industrial bakeries use tempering rooms to prepare frozen dough, butter, fats and fillings before production, while meat and fish processors temper raw materials before cutting, portioning, marinating or packing.

Temporary tempering rooms are also valuable during seasonal demand, maintenance, equipment breakdowns, production expansion, product launches and capacity shortages. By keeping the tempering process on-site and close to production, businesses can reduce cold chain interruptions, maintain process control and respond quickly to changing operational demands.
