The Right Temperature: Crucial for Cheese Making
The cheeses from the Ferme du Vert cheese factory are handmade using a controlled process. They are aged in a cool environment in successive stages, in special areas called “cellars.” However, the limited capacity of these cellars threatens to hinder further production growth. Renovation work is planned, but in the meantime, the Bernard brothers have had Coolworld temporarily install a 30 m³ cold storage room.
